The coffee blossom was collecting once a year right after baby coffee cherries were produced. Harvester have but a short window of just 3-5 days to quickly and carefully pick the blossom by hand. It supremely delicate work. 

This blossom will be roasted with cast iron wok at 1,300 meters above sea level in Maejantai village, Chiang Rai the province of northern Thailand. Until the blossom has a caramelise the natural fructose sugars in the blossoms. Then carefully package the dry blossoms in amber jars to avoid photo-oxidation.

*Coffee blossom contains approximate 5000mg of high antioxidants, which can prevent cancer and help reduce blood fat.  

How to prepare : Add 2-3g of the dry blossoms into 220ml hot water at about 90-92 degrees. Let the tea steep for about 3 minutes, then strain and enjoy! Bon Appétit
